Pear & Almond Teacake Slices ©

About the Recipe

This little beauty is a touch of yum whilst not being overly sweet. The apple sauce and ground almonds work beautifully together in the cake mix. Topped with sliced pear, flaked almonds and some sugar to caramelise it a little

Ingredients

Cake Ingredients

  • 3 Medium Eggs (free-range)

  • 1 teaspoon Baking Powder

  • 3.5oz-100g Apple Sauce

  • 11.2oz-320g Wholemeal Self-Raising Flour

  • 1.6 fl oz-50ml Vegetable Oil

  • 7oz-200g Golden Caster Sugar

  • 3 tablespoon Ground Almonds

  • 1 teaspoon Vanilla Extract

Topping

  • 3 Ripe Pears (peeled, cored and thinly sliced)

  • 2 teaspoons Golden Caster Sugar

  • 1.4oz-40g Flaked Almonds

Preparation

  1. Pre-heat oven with an oven tray inside to 356f/180˚c regular oven or 320˚f /160˚c fan assisted oven. Grease a 20cm/8" square cake tin and set to one side

  2. In a large mixing bowl, beat the eggs together with the sugar, vegetable oil, vanilla essence, ground almonds and apple sauce using an electric hand-whisk or stand mix

  3. Add the sifted flour and baking powder and mix again

  4. Pour the cake batter into the pre-prepared cake tin and smooth out evenly

  5. Apply the topping by placing the slices of pear as a layer on top of the cake mix evenly

  6. Follow by sprinkling the flaked almonds on top and finish by sprinkling the sugar on the top

  7. Pop into the oven for 1 hour (or until you can insert a skewer into the middle and it comes out clean). Allow to cool in the tin before removing

  8. Cut into slices and enjoy
